Garlic Parmesan Chicken and Potatoes

Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 1/2 pounds red potatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup Parmesan cheese, shredded
  • 3 to 4 garlic cloves, minced
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 3/4 cup low-sodium chicken broth

Instructions

  1. Add all ingredients except the shredded Parmesan cheese to the slow cooker. Stir to mix well.
  2. Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  3. Top with shredded Parmesan cheese. Turn off the slow cooker and let it sit with the lid on for a few minutes to melt the cheese.

Notes

You can substitute chicken thighs for extra tenderness. For a richer flavor, use freshly grated Parmesan. Add vegetables like mushrooms or spinach in the last 30 minutes for extra nutrition.
