For the Crust:
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- In a large bowl, combine chicken, potatoes, olive oil, garlic, parmesan, oregano, basil, salt, and pepper. Toss until evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, stirring halfway through, until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
