Garlic Parmesan Chicken and Potatoes

A delicious one-pan meal featuring tender chicken and crispy potatoes coated in garlic and parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  2. In a large bowl, combine chicken, potatoes, olive oil, garlic, parmesan, oregano, basil, salt, and pepper. Toss until evenly coated.
  3. Spread the mixture in a single layer on the prepared baking sheet.
  4. Bake for 25-30 minutes, stirring halfway through, until chicken is cooked through and potatoes are tender.
  5. Garnish with fresh parsley before serving.
