For the Crust:
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- In a large bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, thyme, salt, and pepper.
- Add diced potatoes to the bowl and toss to coat evenly. Spread potatoes in a single layer on the baking sheet.
- Bake potatoes for 15 minutes, then remove from oven and flip them.
- Add chicken breasts to the same bowl with remaining oil mixture, coating them well. Place chicken on the baking sheet with the potatoes.
- Return to oven and bake for another 20-25 minutes, or until chicken is cooked through and potatoes are golden and crispy.
- Garnish with fresh parsley before serving.
