Garlic Parmesan Chicken and Potatoes

A savory one-pan dish featuring tender chicken and crispy potatoes coated in garlic and Parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  2. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, thyme, salt, and pepper.
  3. Add diced potatoes to the bowl and toss to coat evenly. Spread potatoes in a single layer on the baking sheet.
  4. Bake potatoes for 15 minutes, then remove from oven and flip them.
  5. Add chicken breasts to the same bowl with remaining oil mixture, coating them well. Place chicken on the baking sheet with the potatoes.
  6. Return to oven and bake for another 20-25 minutes, or until chicken is cooked through and potatoes are golden and crispy.
  7. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
