- 4 lobster tails (5–6 oz each)
- 4 Tbsp unsalted butter, divided
- 1 Tbsp fresh parsley, finely chopped, plus more for garnish
- 2 garlic cloves, pressed or minced
- 1 tsp dijon mustard
- 1/4 tsp fine sea salt
- 1/8 tsp black pepper
- 1 1/2 Tbsp olive oil
- 1 1/2 Tbsp fresh lemon juice
Instructions
- Preheat oven to broil on high. Position rack so lobster tails are 6 inches from heat. Butterfly tails by cutting top shell lengthwise, pull meat up over shell.
- In a small bowl, mix parsley, garlic, dijon mustard, salt, pepper, olive oil, and lemon juice. Brush half over lobster tails. Dot with 2 Tbsp butter.
- Broil 8-10 minutes until opaque and shells are bright red. Melt remaining 2 Tbsp butter with pan drippings for dipping sauce. Garnish with parsley and serve with lemon wedges.
Notes
Use kitchen shears for easy butterflying. Check internal temperature reaches 140°F. For larger tails, broil further from heat to avoid burning. Reserve extra sauce for dipping.
