For the Crust:
- 2 boneless, skinless chicken breasts
- 4 slices of whole grain bread
- 1 large tomato, sliced
- 1 cup fresh lettuce leaves
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat grill or grill pan over medium-high heat.
- Season chicken breasts with salt and pepper, then brush with olive oil.
- Grill chicken for 6-7 minutes per side or until fully cooked. Let rest for 5 minutes before slicing.
- Mix softened butter and minced garlic in a small bowl to make the garlic butter spread.
- Toast the bread slices lightly if desired.
- Spread garlic butter on each slice of bread, then layer with lettuce, tomato, and sliced grilled chicken.
- Assemble the sandwiches and serve immediately.
