GARLIC BUTTER CAULIFLOWER RICE

Ingredients

  • 16 ounces cauliflower rice (I use frozen)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 tsp chili
  • 2 tsp fresh chopped parsley
  • 1 tsp lemon or lime juice

Instructions

  1. Heat skillet on medium-high heat and add butter.
  2. When butter is melted add garlic and cook until fragrant.
  3. Add cauliflower rice, salt and pepper and chili. Stir and cook until cauliflower rice is light brown.
  4. Remove skillet from heat and top with lemon juice and parsley.
