For the Crust:
- 1 small sugar pumpkin, sliced into 1/2-inch rings
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1 tsp salt
- 1/2 tsp cinnamon
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Slice pumpkin into rings, remove seeds, and pat dry with paper towels.
- Set up three bowls: one with flour, one with beaten eggs, and one with a mix of shredded coconut, panko, salt, and cinnamon.
- Dredge each pumpkin ring in flour, dip in egg, then coat thoroughly in the coconut mixture.
- Heat oil in a deep skillet to 350°F (175°C). Fry rings for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve warm.
