Fried Pumpkin Rings with Coconut Crust

Crispy, golden pumpkin rings coated in a sweet coconut crust, perfect as an appetizer or snack.

For the Crust:

  • 1 small sugar pumpkin, sliced into 1/2-inch rings
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. Slice pumpkin into rings, remove seeds, and pat dry with paper towels.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of shredded coconut, panko, salt, and cinnamon.
  3. Dredge each pumpkin ring in flour, dip in egg, then coat thoroughly in the coconut mixture.
  4. Heat oil in a deep skillet to 350°F (175°C). Fry rings for 2-3 minutes per side until golden brown.
  5. Drain on paper towels and serve warm.
