Fried Pineapple with Coconut Crust

For the Crust:

  • 1 fresh pineapple, peeled and sliced into rings
  • 1 cup shredded coconut
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup cold water
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a mixing bowl, combine flour, cornstarch, salt, cinnamon, and nutmeg. Gradually whisk in cold water to form a smooth batter.
  2. Place shredded coconut in a separate shallow dish.
  3. Dip each pineapple ring into the batter, allowing excess to drip off, then coat evenly with shredded coconut.
  4. Heat vegetable oil in a deep skillet over medium heat. Fry pineapple rings in batches until golden brown, about 2-3 minutes per side.
  5. Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
