For the Crust:
- 1 fresh pineapple, peeled and sliced into rings
- 1 cup shredded coconut
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup cold water
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a mixing bowl, combine flour, cornstarch, salt, cinnamon, and nutmeg. Gradually whisk in cold water to form a smooth batter.
- Place shredded coconut in a separate shallow dish.
- Dip each pineapple ring into the batter, allowing excess to drip off, then coat evenly with shredded coconut.
- Heat vegetable oil in a deep skillet over medium heat. Fry pineapple rings in batches until golden brown, about 2-3 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
