For the Crust:
- 1 fresh pineapple, peeled and sliced into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup cold sparkling water
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
- In a large bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add sparkling water, stirring until smooth to form a batter.
- Dip each pineapple ring into the batter, allowing excess to drip off, then carefully place into the hot oil.
- Fry for 2-3 minutes per side until golden brown and crispy. Remove and drain on paper towels.
- In a small bowl, mix sugar and cinnamon. While still warm, sprinkle the fried pineapple rings with the cinnamon sugar mixture.
