Fried Pineapple Rings

Sweet and crispy fried pineapple rings that make a perfect dessert or snack.

For the Crust:

  • 1 fresh pineapple, peeled and sliced into rings
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold sparkling water
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  2. In a large bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add sparkling water, stirring until smooth to form a batter.
  3. Dip each pineapple ring into the batter, allowing excess to drip off, then carefully place into the hot oil.
  4. Fry for 2-3 minutes per side until golden brown and crispy. Remove and drain on paper towels.
  5. In a small bowl, mix sugar and cinnamon. While still warm, sprinkle the fried pineapple rings with the cinnamon sugar mixture.

Notes
