Fried Pineapple Rings

Sweet and crispy caramelized pineapple rings, perfect as a dessert or snack.

For the Crust:

  • 1 fresh pineapple, peeled and cored
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Slice pineapple into 1/2-inch thick rings and pat dry with paper towels.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with sugar and cinnamon.
  3. Dredge each pineapple ring in flour, dip in egg, then coat in the breadcrumb mixture.
  4. Heat 1/2 inch of vegetable oil in a skillet over medium heat. Fry rings for 2-3 minutes per side until golden brown.
  5. Drain on paper towels and dust with powdered sugar before serving.

Notes

You can customize the seasonings to taste.
