For the Crust:
- 1 fresh pineapple, peeled and cored
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Slice pineapple into 1/2-inch thick rings and pat dry with paper towels.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with sugar and cinnamon.
- Dredge each pineapple ring in flour, dip in egg, then coat in the breadcrumb mixture.
- Heat 1/2 inch of vegetable oil in a skillet over medium heat. Fry rings for 2-3 minutes per side until golden brown.
- Drain on paper towels and dust with powdered sugar before serving.
