For the Crust:
- 1 large pineapple, peeled and sliced into rings
- 1 cup shredded coconut
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1/2 cup vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a shallow bowl, mix shredded coconut, flour, sugar, cinnamon, and salt.
- Dip each pineapple ring into the beaten eggs, then coat evenly with the coconut mixture.
- Heat vegetable oil in a skillet over medium heat.
- Fry the coated pineapple rings for 2-3 minutes per side or until golden brown.
- Remove from oil and drain on paper towels.
- Serve warm, optionally with a drizzle of honey or a scoop of vanilla ice cream.
