Fried Pineapple with Coconut Crust

For the Crust:

  • 1 large pineapple, peeled and sliced into rings
  • 1 cup shredded coconut
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1/2 cup vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a shallow bowl, mix shredded coconut, flour, sugar, cinnamon, and salt.
  2. Dip each pineapple ring into the beaten eggs, then coat evenly with the coconut mixture.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Fry the coated pineapple rings for 2-3 minutes per side or until golden brown.
  5. Remove from oil and drain on paper towels.
  6. Serve warm, optionally with a drizzle of honey or a scoop of vanilla ice cream.
