For the Crust:
- 4 large green tomatoes
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 cup buttermilk
- 1 egg
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Slice tomatoes into 1/4-inch thick rounds and set aside.
- In a shallow bowl, mix flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.
- In another bowl, whisk together buttermilk and egg.
- Dip each tomato slice into the buttermilk mixture, then coat with the flour-cornmeal mixture.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- Fry tomato slices in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve warm.
