For the Crust:
- 4 medium green tomatoes
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 egg
- 1/2 cup buttermilk
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Slice tomatoes into 1/4-inch thick rounds and set aside.
- In a shallow bowl, mix cornmeal, flour, salt, black pepper, paprika, and cayenne pepper.
- In another bowl, whisk together egg and buttermilk.
- Dip tomato slices into the egg mixture, then coat with the cornmeal mixture.
- Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
- Fry tomatoes in batches for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve warm.
