Fresh Orchard Cheesecake

A creamy cheesecake topped with fresh orchard fruits for a delightful dessert.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups mixed fresh orchard fruits (apples, pears, peaches)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over crust.
  4. Bake for 45-50 minutes until center is set. Let cool, then refrigerate for at least 4 hours.
  5. Toss sliced fruits with lemon juice and honey. Arrange on top of chilled cheesecake before serving.

Notes
