- 2 pounds lean ground beef
- 1 envelope beefy onion soup mix
- 3/4 cup Italian bread crumbs
- 2 large eggs
- 3/4 cup milk
- 1 tablespoon Worcestershire sauce
- 2–3 large onions, thinly sliced
- 2 tablespoons butter
- 1 can French onion soup
- 8 slices Swiss cheese (5 diced, 3 whole for topping)
Instructions
- In a medium skillet over medium-high heat, melt butter and add sliced onions. Caramelize for about 10 minutes, stirring occasionally, then transfer to the bottom of a 5-6 quart slow cooker.
- In a large bowl, combine ground beef, beefy onion soup mix, Italian bread crumbs, eggs, milk, Worcestershire sauce, and diced 5 slices of Swiss cheese. Mix until combined and shape into a loaf. Place on top of the onions in the slow cooker. Pour French onion soup over the top.
- Cover and cook on low for 4 hours or high for 3 hours, until internal temperature reaches 165°F. Five minutes before serving, top with remaining 3 slices of Swiss cheese, cover, and melt. Slice and serve with onions.
Notes
For best results, caramelize onions fully to enhance flavor. Internal temperature is key for food safety. Garnish with fresh parsley or thyme for added freshness.
