For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup milk
- 1/4 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup melted butter (for coating)
- 1/2 cup granulated sugar (for coating)
- 1 tbsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, egg, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 2/3 full and bake for 10-12 minutes.
- Mix sugar and cinnamon in a bowl. Brush warm muffins with melted butter, then roll in cinnamon sugar.
