Fluffy Blueberry Biscuits

Light and tender biscuits bursting with juicy blueberries, perfect for breakfast or brunch.

For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Gently stir in buttermilk and vanilla until just combined. Fold in blueberries carefully.
  5. Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges.
  6. Place biscuits on prepared baking sheet and bake for 15-18 minutes until golden brown.
