For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 cup fresh blueberries
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Gently stir in buttermilk and vanilla until just combined. Fold in blueberries carefully.
- Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges.
- Place biscuits on prepared baking sheet and bake for 15-18 minutes until golden brown.
