Fluffy Blueberry Biscuits

Tender, buttery biscuits bursting with sweet blueberries and a hint of lemon zest.

For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup fresh blueberries
  • 1 tsp lemon zest
  • 1 tbsp coarse sugar for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gently stir in buttermilk, blueberries, and lemon zest until just combined. Do not overmix.
  4. Drop 1/4 cup portions onto the prepared baking sheet. Sprinkle with coarse sugar.
  5. Bake for 15-18 minutes until golden brown. Cool slightly before serving.
