Fluffy Blueberry Biscuits

Light, tender biscuits bursting with juicy blueberries and a hint of sweetness, perfect for breakfast or brunch.

For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup fresh blueberries
  • 1 tsp lemon zest
  • 1 tbsp melted butter for brushing
  • Coarse sugar for sprinkling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gently stir in buttermilk, blueberries, and lemon zest until just combined. Do not overmix.
  4. Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 biscuits. Place on prepared baking sheet.
  5. Brush tops with melted butter and sprinkle with coarse sugar. Bake for 15-18 minutes until golden brown. Serve warm.
