For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 cup fresh blueberries
- 1 tsp lemon zest
- 1 tbsp melted butter for brushing
- Coarse sugar for sprinkling
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Gently stir in buttermilk, blueberries, and lemon zest until just combined. Do not overmix.
- Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 biscuits. Place on prepared baking sheet.
- Brush tops with melted butter and sprinkle with coarse sugar. Bake for 15-18 minutes until golden brown. Serve warm.
