For the Crust:
- 3 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1 tablespoon granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter
- Powdered sugar (for dusting)
- Fresh berries (optional, for serving)
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C).
- In a blender, combine eggs, flour, milk, sugar, vanilla extract, and salt. Blend until smooth.
- Place butter in a 9-inch ovenproof skillet or baking dish. Heat in the oven until the butter is melted and bubbly, about 2-3 minutes.
- Pour the batter into the hot skillet with melted butter. Immediately return to the oven.
- Bake for 15-20 minutes, until the pancake is puffed and golden brown around the edges.
- Remove from oven, dust with powdered sugar, and serve immediately with fresh berries if desired.
