Fluffy Baked German Pancake

A light and airy German pancake that puffs up beautifully in the oven, perfect for a special breakfast or brunch.

For the Crust:

  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • Powdered sugar (for dusting)
  • Fresh berries (optional, for serving)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. In a blender, combine eggs, flour, milk, sugar, vanilla extract, and salt. Blend until smooth.
  3. Place butter in a 9-inch ovenproof skillet or baking dish. Heat in the oven until the butter is melted and bubbly, about 2-3 minutes.
  4. Pour the batter into the hot skillet with melted butter. Immediately return to the oven.
  5. Bake for 15-20 minutes, until the pancake is puffed and golden brown around the edges.
  6. Remove from oven, dust with powdered sugar, and serve immediately with fresh berries if desired.
