Elegant Strawberry Sugar Cookie Cups

Delicate sugar cookie cups filled with a sweet strawberry cream and topped with fresh berries for an elegant dessert.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup diced fresh strawberries
  • Whole strawberries for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan.
  2. Cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Whisk together flour, baking powder, and salt. Gradually add to butter mixture until combined.
  4. Press dough into mini muffin cups, forming small cups. Bake for 12-15 minutes until edges are golden.
  5. While cups cool, beat cream cheese and powdered sugar until smooth. Fold in diced strawberries.
  6. Fill cooled cookie cups with strawberry cream mixture. Top with whole strawberries before serving.
