For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup diced fresh strawberries
- Whole strawberries for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a mini muffin pan.
- Cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- Whisk together flour, baking powder, and salt. Gradually add to butter mixture until combined.
- Press dough into mini muffin cups, forming small cups. Bake for 12-15 minutes until edges are golden.
- While cups cool, beat cream cheese and powdered sugar until smooth. Fold in diced strawberries.
- Fill cooled cookie cups with strawberry cream mixture. Top with whole strawberries before serving.
