For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 2 tbsp all-purpose flour
- 1/4 cup sour cream
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the pan to form the crust.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla, flour, and sour cream.
- Pour 2/3 of the batter over the crust. Mix lemon juice and zest into the remaining batter, then dollop over the plain layer.
- Swirl with a knife to create a marbled effect. Bake for 30-35 minutes until set. Cool completely before slicing.
