For the Crust:
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix mashed bananas, melted butter, sugar, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and 1 teaspoon cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour batter into the prepared loaf pan.
- In a small bowl, mix 2 tablespoons sugar and 1 teaspoon cinnamon. Sprinkle evenly over the batter.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
