Easy Snickerdoodle Banana Bread

A delicious twist on classic banana bread with the warm flavors of snickerdoodle cookies.

For the Crust:

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, melted butter, sugar, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and 1 teaspoon cinnamon.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. Pour batter into the prepared loaf pan.
  6. In a small bowl, mix 2 tablespoons sugar and 1 teaspoon cinnamon. Sprinkle evenly over the batter.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
