For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 cups shredded coconut
- 1 cup caramel sauce
- 1 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Mix in flour, salt, and vanilla to form a dough.
- Roll out the dough and cut into circles. Bake for 10-12 minutes until lightly golden. Let cool completely.
- Toast shredded coconut in a dry skillet until lightly browned. Mix with caramel sauce and spread over cooled cookies.
- Melt chocolate chips and drizzle over the top of each cookie. Let set before serving.
