Easy Roasted Pears with Blue Cheese

Tender roasted pears drizzled with olive oil, stuffed with creamy blue cheese and toasted walnuts, then baked until the cheese melts. Served on a bed of mixed greens with a honey drizzle and fresh thyme for a perfect balance of sweet and savory flavors.

Ingredients

  • 3 large Bosc pears
  • 12 teaspoons extra virgin olive oil
  • 2 1/2 ounces blue cheese, crumbled
  • 1/3 cup walnuts, chopped
  • 3 sprigs fresh thyme, leaves removed
  • 12 tablespoons honey
  • 1/2 teaspoon Aleppo pepper (optional)
  • Flaky salt, for garnish
  • Salt and pepper, to taste
  • Mixed greens (for serving)
  • Balsamic vinegar (for greens dressing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the pears in half lengthwise and remove the core and seeds.
  3. Place the pear halves cut side down in a baking dish or cast iron skillet.
  4. Drizzle the pears with olive oil and season lightly with salt and pepper.
  5. Roast the pears cut side down for 15 minutes.
  6. Remove the pears from the oven and turn them cut side up.
  7. Stuff each pear half with crumbled blue cheese, chopped walnuts, and fresh thyme leaves.
  8. Return the pears to the oven and bake for an additional 8 to 10 minutes, until the cheese is melted and slightly golden.
  9. Meanwhile, mix honey with Aleppo pepper in a small bowl.
  10. Remove the pears from the oven and drizzle with the honey mixture.
  11. Serve the pears on a bed of mixed greens tossed with olive oil and balsamic vinegar, garnished with flaky salt and extra thyme if desired.

Notes

Use Bosc pears for their firmness and sweetness which hold up well to roasting. Toast walnuts lightly before adding for extra crunch and flavor. The Aleppo pepper in the honey drizzle adds a subtle spicy kick but can be omitted for a milder taste.
