For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, chilled
- 2 ripe peaches, sliced
- 2 tbsp peach preserves, warmed
Instructions
1. Prepare the Crust:
- Combine graham cracker crumbs, melted butter, and granulated sugar. Press into mini tart pans and chill for 15 minutes.
- Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture.
- Spoon custard into chilled crusts. Top with peach slices and brush with warmed peach preserves. Refrigerate for at least 2 hours before serving.
