Easy Lemon Zucchini Bread

A moist and tender quick bread with bright lemon flavor and shredded zucchini for a delightful treat.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/3 cups sugar
  • 2 tablespoons lemon juice
  • 1/2 cup buttermilk
  • Zest of 1 lemon
  • 1 cup grated zucchini, drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, salt, and baking powder.
  3. In a large bowl, beat eggs, oil, sugar, lemon juice, buttermilk, and lemon zest until combined.
  4. Gradually stir dry ingredients into wet ingredients until just combined. Fold in grated zucchini.
  5. Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
