For the Crust:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/3 cups sugar
- 2 tablespoons lemon juice
- 1/2 cup buttermilk
- Zest of 1 lemon
- 1 cup grated zucchini, drained
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, salt, and baking powder.
- In a large bowl, beat eggs, oil, sugar, lemon juice, buttermilk, and lemon zest until combined.
- Gradually stir dry ingredients into wet ingredients until just combined. Fold in grated zucchini.
- Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
