For the Crust:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup vanilla pudding mix (dry)
- 1/4 cup coarse sugar or turbinado sugar for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, salt, and dry vanilla pudding mix. Gradually add to the wet ingredients, mixing until just combined.
- Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten each ball slightly with the bottom of a glass.
- Sprinkle the top of each cookie generously with coarse sugar.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
