For the Crust:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts (optional)
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. Fold in grated carrots and walnuts (if using).
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes or until edges are golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- For the filling, beat cream cheese, powdered sugar, and vanilla extract until smooth. Spread filling on the flat side of half the cookies and top with remaining cookies to form sandwiches.
