Caramel Apple Cheesecake Bars

A delicious dessert combining a flaky shortbread crust, creamy cheesecake filling, cinnamon-spiced apples, a brown sugar oat streusel topping, and a caramel drizzle. Perfect for Thanksgiving.

  • 2 cups all-purpose flour (for crust)
  • 1/2 cup firmly packed brown sugar (for crust)
  • 1 cup butter, softened (for crust)
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 Granny Smith apples, peeled, cored and finely chopped (about 3 cups)
  • 2 tablespoons sugar (for apples)
  • 1/2 teaspoon ground cinnamon (for apples)
  • 1/4 teaspoon ground nutmeg (for apples)
  • 1 cup firmly packed brown sugar (for streusel)
  • 1 cup all-purpose flour (for streusel)
  • 1/2 cup quick cooking oats (for streusel)
  • 1/2 cup butter, softened (for streusel)
  • 1/2 cup caramel topping for drizzling after baked

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare crust: In a bowl, combine 2 cups flour, 1/2 cup brown sugar, and 1 cup softened butter. Mix until crumbly and press evenly into the bottom of a 9×13 inch pan.
  3. Bake crust for about 15 minutes or until lightly golden. Remove from oven and set aside.
  4. Prepare cheesecake filling: Beat cream cheese and 3/4 cup sugar together until smooth and creamy.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in vanilla extract until fully combined.
  7. Prepare apples: In a bowl, toss chopped apples with 2 tablespoons sugar, cinnamon, and nutmeg.
  8. Prepare streusel topping: Combine 1 cup brown sugar, 1 cup flour, 1/2 cup oats, and 1/2 cup softened butter. Mix until crumbly.
  9. Spread cheesecake filling evenly over the baked crust.
  10. Evenly distribute the cinnamon-spiced apples over the cheesecake layer.
  11. Sprinkle the streusel topping evenly over the apples.
  12. Bake for 50-60 minutes or until the top is golden and the cheesecake is set.
  13. Remove from oven and let cool completely.
  14. Drizzle caramel topping over the cooled bars before serving.

Notes

Use a 9×13 inch pan for best results. Allow the bars to cool completely before drizzling caramel to prevent it from melting into the layers. For easier removal, line the pan with parchment paper.
