Easy Blueberry Velvet Cheesecake

A creamy and velvety cheesecake with a luscious blueberry topping, perfect for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh blueberries
  • 1/4 cup water
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add vanilla, eggs, sour cream, and heavy cream, mixing well after each addition.
  4. Pour filling over crust. Bake for 45-50 minutes or until center is set. Let cool, then refrigerate for at least 4 hours.
  5. For the topping, combine blueberries, water, 2 tbsp sugar, and cornstarch in a saucepan. Cook over medium heat until thickened. Cool and spread over cheesecake before serving.
