For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup blueberry pie filling
- 1/2 cup fresh blueberries for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla, mixing until well combined.
- Pour half of the cheesecake batter over the crust. Spoon blueberry pie filling over the batter, then top with remaining batter.
- Bake for 50-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
- Garnish with fresh blueberries before serving.
