Easy Blueberry Velvet Cheesecake

A creamy and velvety cheesecake with a burst of blueberry flavor, perfect for any occasion.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup blueberry pie filling
  • 1/2 cup fresh blueberries for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla, mixing until well combined.
  4. Pour half of the cheesecake batter over the crust. Spoon blueberry pie filling over the batter, then top with remaining batter.
  5. Bake for 50-60 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
  6. Garnish with fresh blueberries before serving.
