Double Chocolate Marshmallow Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in dry ingredients until just combined. Fold in chocolate chips and marshmallows.
  5. Drop rounded tablespoons of dough onto prepared sheets. Bake for 10-12 minutes until edges are set. Cool on sheets for 5 minutes before transferring.
