Double Chocolate Marshmallow Cookies

Rich, fudgy chocolate cookies stuffed with gooey marshmallow and chocolate chips for an indulgent treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 12 large marshmallows, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix dry ingredients into wet ingredients until combined. Fold in chocolate chips.
  5. Scoop tablespoon-sized dough balls, press a marshmallow half into each, and cover with more dough to seal.
  6. Bake for 10-12 minutes until edges are set. Let cool on baking sheets for 5 minutes before transferring.

You can customize the seasonings to taste.
