Classic Rhubarb Cobbler

Ingredients

  • 1 tablespoon corn starch
  • 1 teaspoon lemon juice, freshly squeezed
  • 1 cup regular flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 3/4 stick softened unsalted butter
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • Serve with whipped cream or ice cream
