For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1 cup powdered sugar
- 2 tbsp milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, mix flour, granulated sugar, pumpkin, oil, eggs, baking soda, cinnamon, nutmeg, and salt until well combined. Pour into prepared pan.
- In a small bowl, combine chopped pecans, brown sugar, and melted butter. Sprinkle evenly over batter.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool.
- Whisk powdered sugar and milk until smooth. Drizzle over cooled cake before serving.
