For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1 cup finely chopped pecans
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup caramel sauce, plus extra for drizzling
- 1/2 cup toasted pecans for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs, chopped pecans, and melted butter. Press into a 9-inch springform pan.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until blended.
- Pour filling over crust. Drizzle caramel sauce over top and swirl with a knife.
- Bake for 50-55 minutes until center is almost set. Cool completely, then refrigerate for at least 4 hours.
- Garnish with toasted pecans and additional caramel before serving.
