For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/3 cup brown sugar
- 1 tbsp ground cinnamon
- 1/2 cup heavy cream
- 1 cup powdered sugar
- 4 oz cream cheese, softened
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
- Beat 3 packages of cream cheese and granulated sugar until smooth. Add eggs one at a time, then mix in vanilla.
- In a separate bowl, combine brown sugar and cinnamon. Pour half the cheesecake batter over the crust, then sprinkle half the cinnamon sugar mixture. Repeat layers and swirl with a knife.
- Bake for 45-50 minutes until center is set. Let cool, then refrigerate for at least 4 hours.
- For frosting, beat heavy cream, powdered sugar, and remaining cream cheese until fluffy. Spread over chilled cheesecake before serving.
