  • 1/4 cup brown sugar

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup all-purpose flour
  • 2 teaspoons ground cinnamon (for filling swirl)
  • 1/4 cup unsalted butter, melted (for filling swirl)
  • 1/2 cup brown sugar (for filling swirl)
  • Cream cheese frosting for topping (optional)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, brown sugar, and cinnamon in a bowl. Add melted butter and combine well.
  3. Press the crust mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
  4. In a medium bowl, combine brown sugar, flour, cinnamon, and melted butter to make the cinnamon swirl filling. Set aside.
  5. In a large bowl, beat softened cream cheese until fluffy using a mixer.
  6. Add granulated sugar and brown sugar to the cream cheese and beat until combined.
  7. Mix in sour cream until smooth.
  8. Add eggs one at a time, beating after each addition until fully incorporated.
  9. Stir in vanilla extract.
  10. Pour half of the cheesecake batter over the cooled crust.
  11. Drop spoonfuls of the cinnamon swirl filling over the batter, then pour the remaining cheesecake batter on top.
  12. Use a knife or skewer to gently swirl the cinnamon filling into the cheesecake batter.
  13. Bake for 55-65 minutes or until the center is almost set but still slightly jiggly.
  14. Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
  15. Remove from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  16. Before serving, spread cream cheese frosting over the top if desired.

Notes

Use full-fat cream cheese for the best texture and flavor. Allow the cheesecake to cool gradually in the oven to prevent cracking. The cream cheese frosting on top mimics the classic cinnamon roll icing and adds extra richness.
