			For the Crust:
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
- 1 pre-made cinnamon roll dough (8 count)
- 4 oz cream cheese, softened (for glaze)
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- Press cinnamon roll dough into the bottom of the pan to form a crust, pinching seams together.
- In a large bowl, beat 16 oz cream cheese and granulated sugar until smooth. Add eggs one at a time, then vanilla and sour cream, mixing well.
- In a small bowl, mix brown sugar and cinnamon. Swirl half of this mixture into the cheesecake batter.
- Pour batter over the dough crust. Sprinkle remaining cinnamon sugar on top and swirl gently with a knife.
- Bake for 45-50 minutes until center is almost set. Cool completely, then refrigerate for at least 4 hours.
- For glaze, beat 4 oz cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over chilled cheesecake before serving.
