For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup brown sugar
- 2 tsp ground cinnamon
- 4 oz cream cheese, softened (for frosting)
- 1/4 cup butter, softened (for frosting)
- 1 cup powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- In a small bowl, combine brown sugar and cinnamon. Swirl half of this mixture into the cheesecake batter.
- Pour batter over crust, then dollop remaining cinnamon mixture on top and swirl with a knife.
- Bake for 45-50 minutes until center is almost set. Cool completely.
- For frosting, beat cream cheese, butter, powdered sugar and vanilla until fluffy. Spread over cooled cheesecake.
