For the Crust:
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 1/2 cups pitted fresh or frozen cherries, chopped
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
- Add eggs, buttermilk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Fold in chopped cherries.
- Pour batter into prepared pan. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool completely.
- For ganache: Heat cream until simmering. Pour over chocolate chips in a bowl. Let sit 5 minutes, then whisk until smooth. Pour over cooled cake.
