Decadent Carrot Cake Bars with Cream Cheese Frosting

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
  4. Gradually mix dry ingredients into wet ingredients until combined.
  5. Fold in grated carrots and walnuts (if using). Spread batter into prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until creamy.
  8. Spread frosting over cooled bars. Cut into squares and serve.
