Decadent Carrot Cake Bars with Cream Cheese Frosting

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth. Gradually stir in dry ingredients, then fold in carrots and walnuts.
  4. Spread batter evenly into prepared pan. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy. Spread over cooled bars.
  6. Chill for at least 1 hour before slicing into squares.
